4 Beetroots, boiled
A large handful baby spinach
1/2 cup feta, crumbled
3 tablespoons pine nuts
Mountain Balsamic Dressing
Directions
1. Thinly slice beetroot into rounds with a mandolin or by hand. Top with baby spinach, crumbled feta, and pine nuts. Drizzle Mountain Balsamic Dressing generously and serve!
