Ingredients

Pizza
2 ready-made medium pizza bases (or make your own – refer to precooking notes)
2 cups mozzarella, torn
6 slices of Prosciutto
A handful of fresh basil
Tomato Sauce
2 large tomatoes, cut into wedges
3 garlic cloves, peeled & crushed
1 tablespoon olive oil
½ teaspoon salt
1 tablespoon tomato puree
A few leaves of fresh basil

A few pieces of fresh mozzarella (optional)

Handful fresh basil

Method

1. Preheat oven to 200 degrees Celsius. In a baking dish, place tomatoes, garlic, olive oil, and salt & toss to combine. Bake until tomatoes are nicely roasted – about 15 minutes. Combine with tomato puree, fresh basil leaves and blend in a food processor. Set aside.

2. Reduce oven temperature to 180 degrees Celsius. Line a baking tray with parchment paper if you don’t have a pizza tray/stone and brush with olive oil and dust with little all-purpose flour. Place pizza bases on a tray and spread with tomato sauce. Top generously with torn mozzarella and bake until browned – about 15 minutes or so. In a separate baking tray, place slices of prosciutto and bake for 5 – 7 minutes or so until crispy.

3. To serve, top pizza with crispy prosciutto slices, fresh basil leaves & drizzle honey balsamic dressing generously. Eat while hot!

 

Precooking notes

You can make your own pizza dough the day before too. Simply follow the below recipe. Pizza dough tastes incredible the more time it has to rest so if you make it a day in advance, simply cover with cling film and refrigerate overnight. Remove an hour or two before you need them.
