Ingredients

Cajun marinade (makes about 1/3 cup)
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon celery salt
3 tablespoons smoked paprika
1 teaspoon cayenne pepper
1 tablespoon ground black pepper
1 tablespoon dried thyme
1 tablespoon dried oregano
½ tablespoon salt
Fava Beans
1 tablespoon Mountain Canola Oil
1 ½ cup Mountain Fava Beans
1 tablespoon Cajun spice
Salsa
½ cup tomatoes, chopped
1 small onion, sliced
1 bunch cilantro
1 teaspoon salt
2 tablespoons lemon juice
Avocado Cream
1 small avocado, mashed
1 tablespoon Greek yogurt
1 teaspoon lemon juice
½ teaspoon salt

Lime wedges

1. Cajun spice mix: combine all spices together and set aside.

2. Fava Beans: Preheat oven to 200 degrees Celsius. Combine the ingredients for the fava beans together and bake for 20 minutes.  Remove and set aside.

3. Salsa: Combine all ingredients and set aside.

4. Avocado cream:  Blend all ingredients together and refrigerate till use.

5. To serve, spread avocado cream at the bottom of each taco.  Top with salsa, followed by fava beans.  Add sliced avocado & crumbled cheddar. Drizzle with sour cream and garnish with chopped scallion.  Eat with extra sour cream and enjoy!

Soaking Tips

1. Soak 1 cup of dried fava beans in 4 cups of water with 1 tsp of salt for 8 hours at room temperature.

2. Drain and rinse the beans.

3. Boil for 45 minutes

Tip: To use in a soup or stew, you can cook for 30 minutes before use as they’ll boil further whilst cooking.
