Ingredients

1 tablespoon Mountain Canola Oil
3 cups Mountain Faba Beans, mashed (refer to precooking notes)
1 cup sweet potato or pumpkin (boiled and mashed)
1 large white onion, finely chopped
1 tablespoon garlic, minced
1 large green pepper, cubed
1 teaspoon ground cumin
1 teaspoon celery salt
1 tablespoon garlic salt
1 tablespoon onion flakes
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
½ cup cheddar cheese, grated
½ cup breadcrumbs
1 egg
1 large handful cilantro, finely chopped
Salt & black pepper to taste
Paprika (optional)

Method

Preheat your oven to 180 degrees Celsius and line a baking tray with parchment paper.

In a large pan, heat the canola oil and sauté the onion until soft and translucent. Add the garlic, green pepper and continue sautéing until soft. Set aside to cool completely.

In a large bowl, mash the prepared faba beans with a fork. Add all remaining ingredients including the onion, garlic & green pepper mixture, and mix well. Oil your hands and form burger patties. Place burger patties onto the prepared tray and bake on each side for 10 – 12 minutes.

To assemble, spread mayo on each side of the burger bun and place a few slices of iceberg lettuce on the bottom one. Place a slice of cheese and a burger patty. Add a few slices of tomato and top with the second bun. Serve with hand-cut fries, ketchup, and sour cream!

 

Notes

· To prepare the faba beans, soak overnight in salted water. Drain and pressure cook for about 45 minutes – this is a great consistency for a burger or if mashing. For a harder consistency where you’d use the beans for a soup, stew, etc. pressure cook for 30 minutes as they’ll boil further whilst cooking the recipe.

· You can also breadcrumb the burgers from the outside and shallow fry them. Simply coat in breadcrumbs and pan fry until golden brown on both sides for about 3 – 4 minutes on each side.
