Ingredients

1 cup Cubed yellow peppers
1 cup Cubed Onions
1 cup Cubed red pepper
2 Breasts, cut into cubes

Directions

Marinade

  • 3 tbsp Pure Mountain Honey balsamic dressing

  • 2 tbsp Pure Mountain Chili infused Canola Oil

  • 2 tbsp Lemon juice

  • Salt & pepper, to taste

  • 3 tbsp Minced garlic & ginger

INSTRUCTIONS

  1. Make the marinade by mixing together all the ingredients

  2. Rub the marinade into the chicken cubes and let it marinate in the fridge for 30 minutes

  3. Soak wooden skewers in cold water to prevent them from burning.

  4. Start assembling the skewers by alternating, peppers, chicken, and onion

  5. Once assembled, heat up a griddle over hot heat and add some Pure Mountain Chili-infused canola oil.

  6. Lay a few skewers on the hot griddle and cook for 4 minutes while turning. Repeat until all the skewers are cooked.

  7. If using a grill, light it up until hot then lay the skewers and grill. be careful not to burn as the heat is more on the grill. Serve with some kachumbari.
