Ingredients

500g beef fillet, cubed
2 tablespoons Mountain Herb Canola Oil
1 bay leaf
1 tablespoon garlic, minced
1 white onion, sliced
1 carrot, chopped
2 celery stalks, chopped
2 cups beef stock
1 tablespoon Worcershire sauce
1 tablespoon all purpose flour
1 tablespoon butter
Salt and black pepper to taste
Puff pastry
1 Egg yolk

Directions

  1. Heat the oil over medium heat adding bay leaf, onion, carrots, and celery, and cook until soft, roughly about 5 minutes.

  2. Add the beef, minced garlic, and sauté for 5 minutes.

  3. Add the rest of the ingredients (except the butter and flour), reduce to a low heat, and simmer for 30 – 40 minutes until the liquid has reduced to a thick consistency.  At this point, combine the butter and flour together and add in 1 teaspoon increments until gravy has thickened and is coating the meat and vegetables.

  4. Top with puff pastry, brush with egg yolk, and bake at 200 degrees Celsius for 30 minutes, or until brown and serve.

Precooking Tips

  • Adjust the salt and black pepper right at the end before adding the puff pastry as this will depend on the saltiness of the stock you’ve used.

  • Shake the Canola bottle well to get all the herbs and black pepper from the bottom to cook with for a depth of flavor!
