Pure Mountain Split Peas Mukimo

1. Start by boiling the split peas. These do not require pre-soaking. Wash and rinse the split peas. Put them in a heavy-duty pot and cover with cold water. Cook for 30 minutes until they soften.
2. Peel and wash the potatoes. Bring to a boil with enough salt. They should be almost mushy for easier pounding.
3. Start frying the onions in Pure Mountain Canola oil until they soften. Then add chopped green onions and cook for 2 minutes.
4. Add chopped spinach and salt and cook for 8 minutes. The spinach will reduce in size significantly.
5. Add the boiled potatoes and split peas. Start mashing everything together while still cooking. Reduce heat to low and continue mashing until everything comes together. Adjust salt if needed.
6. Remove from heat and serve with beef stew.
