Ingredients

1 cups Pure Mountain Chickpeas, cooked (refer to precooking tips)
1 large sweet potato, cooked & mashed
½ cup quinoa, cooked
¼ cup red onion, finely chopped
3 cloves garlic, minced
½ cup walnuts, finely chopped
Small handful parsley, finely chopped
2 tablespoons Pure Mountain Herb Infused Canola Oil
1 ½ tablespoons lemon juice
1 teaspoon cumin powder
1 teaspoon celery salt
½ teaspoon salt (or to taste)

1. Preheat the oven to 175 degrees Celsius and line a baking sheet with parchment paper.

2. Combine all ingredients together and mash roughly with a fork to a rough consistency. Using your hands, roll the mixture into balls then press down into thick patties, about 2 – 3 cm thick. Place on baking sheet.

3. Bake for 30 minutes or so until golden brown.

4. To serve, spread buns with mayonnaise and layer with patties, mashed or sliced avocado & sprouts.

Precooking tips

To prepare the chickpeas, soak overnight for at least 8 hours in salted room temperature water, and rinse before use. Pressure cook for about 12 – 15 minutes or boil on the stove for about 30 – 40 minutes.

The above recipe is child friendly, for some heat add 1 teaspoon paprika & ½ teaspoon freshly ground black pepper to the mixture.

For meal prep, you can double/triple the quantity and freeze the mixture before shaping it into patties. Allow to come to room temperature and shape (as per above) if freezing.
